Serve with saffron rice

Ingredients

  • Onion (1 medium)
  • Potatoes (4 medium)
  • Garlic (4 cloves)
  • Curry powder (2 tsp)
  • Cumin (2 tsp)
  • Tomato paste (2 tbsp)
  • Canned whole tomatoes (1 can)
  • Broth / water (1500 mL)
  • Rinsed uncooked lentils (1 cup)
  • Sour cream
  • Lemon

Cooking Instructions

  1. Sautee onions and potatoes over medium-high in some oil and butter until onions translucent
  2. Mix in the curry powder, cumin, and galic and cook until fragrant
  3. Mix in tomato paste and add the tomatoes. Cook for a bit longer
  4. Add in the lentils and the broth and bring to a boil
  5. Simmer for 30 mins
  6. Add salt to taste and some lemon juice
  7. Serve with sour cream and a lemon slice
